2 cups (carrots, bell peppers, cabbage, beans)
1 large, sliced
4 cloves, minced
1 inch, julienned

Cook the millet noodles according to package instructions. Drain and set aside.
Heat oil in a large wok or pan over high heat.
Add garlic, ginger, and green chilies. Stir-fry for 30 seconds.
Add onions and cook for 2 minutes until slightly softened.
Add mixed vegetables and stir-fry for 3-4 minutes until crisp-tender.
Add cooked noodles to the pan and toss gently.
Add soy sauce, tomato ketchup, and vinegar. Mix well.
Season with salt and pepper. Stir-fry for 2-3 minutes.
Garnish with chopped spring onions and serve hot.
