Foxtail Millet Pulao

Ingredients

Foxtail Millet Flour (500g)

1 cup (made into small dumplings)

Mixed vegetables

1 1/2 cups (peas, carrots, beans)

Onion

1 large, sliced

Ginger-garlic paste

1 tbsp

Green chilies

2, slit

Whole spices

2 bay leaves, 4 green cardamom, 1 cinnamon stick

Cumin seeds

1 tsp

Turmeric powder

1/2 tsp

Red chili powder

1/2 tsp

Garam masala

1/2 tsp

Salt

to taste

Ghee

3 tbsp

Water

3 cups

Fresh mint

for garnish

Instructions

Mix Foxtail Millet Flour with a little water to form small dumplings. Set aside.

Heat ghee in a heavy-bottomed pot over medium heat.

Add whole spices and cumin seeds. Let them splutter.

Add sliced onions and cook until golden brown.

Add ginger-garlic paste and green chilies. Cook for 1 minute.

Add mixed vegetables and cook for 3-4 minutes.

Add turmeric, red chili powder, and garam masala. Mix well.

Add the millet dumplings and gently mix.

Add water and salt. Bring to a boil.

Reduce heat, cover, and simmer for 15-20 minutes until dumplings are cooked.

Garnish with fresh mint and serve hot with raita.
