
Millet Upma with Ragi Flakes

This wholesome pulao is a complete meal in itself, combining the nutrition of foxtail millet with vegetables and spices. It's perfect for lunch or dinner and is much healthier than regular rice pulao.

Mix Foxtail Millet Flour with a little water to form small dumplings. Set aside.
Heat ghee in a heavy-bottomed pot over medium heat.
Add whole spices and cumin seeds. Let them splutter.
Add sliced onions and cook until golden brown.
Add ginger-garlic paste and green chilies. Cook for 1 minute.
Add mixed vegetables and cook for 3-4 minutes.
Add turmeric, red chili powder, and garam masala. Mix well.
Add the millet dumplings and gently mix.
Add water and salt. Bring to a boil.
Reduce heat, cover, and simmer for 15-20 minutes until dumplings are cooked.
Garnish with fresh mint and serve hot with raita.
